Peppers Stuffed with Walnut Tuna Salad

INGREDIENTS

(from Dr. Atkins’ Quick & Easy New Diet Cookbook)
You’ll never miss the bread with this zesty tuna salad.

1⁄2 cup chopped walnuts
1⁄2 cup chopped scallions
1⁄4 cup olive oil
1⁄4 cup mayonnaise
2 Tbsp lemon juice
1 tsp Dijon mustard
1⁄2 tsp freshly ground pepper
Salt to taste
Two 6-oz cans chunk white tuna, drained
2 bell peppers, stemmed, halved crosswise, and seeded
2 Tbsp chopped fresh parsley
4 thin lemon slices for garnish (optional)
 

 

PREPARATION

Combine the walnuts, scallions, oil, mayonnaise, lemon juice, mustard, pepper, and salt in a bowl and mix well. Using a fork, gently stir in the tuna.
     Fill each bell pepper half with one-fourth of the tuna mixture. Sprinkle with parsley and garnish with lemon slices if desired. Serve immediately.
