Tomato-Lemon Chutney
INGREDIENTS
1 1⁄2 lb grape or cherry tomatoes (about 4 cups), stemmed
1 cup honey
1⁄3 cup apple cider vinegar
1 lemon (including peel), very thinly sliced and seeded
2 Tbsp minced fresh ginger
2 tsp Chinese 5-spice powder
1⁄2 tsp salt
1⁄4 tsp white pepper
PREPARATION
In medium, heavy-bottomed saucepan, combine tomatoes, honey, vinegar, lemon, ginger, 5-spice powder, salt and pepper. Bring to boil over medium heat, stirring often.
Reduce heat and simmer briskly, uncovered, stirring occasionally for about 1 to 11⁄2 hours, until mixture is reduced to about 2 cups and has the consistency of thick jam. Taste and adjust seasonings.
