Stuffed Dates
INGREDIENTS
Nuts, coconut and honey make a sweet stuffing for dates in this simple recipe.
14 Medjool dates, pitted
1⁄2 cup walnuts
4 Tbsp shredded coconut
2 Tbsp honey
1⁄4 tsp orange extract
PREPARATION
Use a fruit knife to split the top of the dates. Set dates aside on a dinner plate or platter.
Grind the walnuts in a food processor bowl or blender. Add coconut, honey and orange extract. Blend until smooth. Taste and adjust the seasonings, if desired.
Using a butter knife, scoop a little of the coconut-walnut mixture into each date. Serve.
