Baked Apples with Ginger-Lemon Sauce
INGREDIENTS
4 red, sweet apples
Juice of 2 lemons
1⁄2 cup honey
1 Tbsp grated fresh ginger
Cinnamon
PREPARATION
Preheat oven to 350 degrees. In a saucepan, combine lemon juice and honey. Stir over medium heat until honey is dissolved. Turn off heat and add ginger by grating over saucepan.
Core apples and peel top portion only. Place in baking dish. Pour sauces over apples and sprinkle with cinnamon. Bake for 30 to 45 minutes, checking for softness by inserting a knife. Baste during baking.
